Chalong incorporates sous vide cooking technique and finish off using charcoal grilling. All meats and vegetables here are grilled in the highly acclaimed Josper Charcoal Oven. They also smoke their meats with apple wood to impart more depth. All bowls are served with mi cuit (half-cooked) egg and Japanese Yamagata Haenuki rice.
