Popular noodle stall selling handmade noodles also known as ban mian, available with a variety of ingredients like sliced fish, fish maw, clams or abalone. China Whampoa offers both soup and ‘dry’ version served with noodles like you mian (thin noodle), and ban mian (flat noodle). The crowd-favourite Dry Home Made Yu Mee with Prawns ($4/$5) consists of springy, chewy handmade thin noodles tossed in a special sweet-savoury black sauce that’s thicker than the regular one we see. Toppings and ingredients include large prawns, minced pork, crispy ikan billis, mushrooms and sayur manis vegetable, served with fried shallots and a fiery homemade chilli paste.
Instead of pork, the soup version features a clear, egg-less soup base made from soya beans and ikan bilis, enhanced with lot’s of sayur manis vegetable. Prawns, minced pork and crispy ikan bilis are included too.
