Well-known noodle stall by a husband and wife team, specializing in a drier (but equally as flavourful) version of the local classic Fried Hokkien Prawn Noodles. Starting at $4, Hainan simmers the mix of thick egg noodles and medium-thickness bee hoon (rice vermicelli noodles) in a rich prawn stock, allowing the stock to evaporate as the noodles absorb the flavours before quickly frying them under an intense heat with prawns, slices of squid and slices of pork belly with pork lard and fried shallots.

Made from a sixty year old family recipe, this is a masterful dish that requires precise timing in order to strike the balance that separates smoky smoothness from charred gooey noodles. Hainan’s fried Hokkien noodle is served with sambal chilli, cut chilli padi and lime, so be prepared to sweat a little.
