Set amid the storied arches of CHIJMES, one-Michelin-starred Whitegrass presents a contemporary take on fine dining with Chef-Owner Sam Aisbett’s distinctive interpretation of Modern Australian cuisine with a flavour-driven approached to international ingredients.

Diners can choose from a three, five or eight course tasting menu at dinner, and a choice 2 or 3 course, or 5 course set for lunch. These menus meld native Australian ingredients and Japanese influences with Chef Sam Aisbett’s fascination with local produce and his inclination to fundamental culinary techniques.
