In Kappo cuisine, the dishes are known to be prepared with meticulous effort. One of the signature dishes, Edo Yaki (江戸焼き) is the original form of Sukiyaki, using miso as base instead of the usual shoyu, which will be freshly prepared by the staff at the dining table, accompanied by an explanation of the dish and its ingredients. Apart from the wide variety of food menu items, Niku Kappo also provides an extensive alcohol menu from up to 50 different kinds of Sake and Shochu specially imported from Japan and not sold anywhere else in Singapore. Another feature is the cocktail list which consists of 100 different kinds of Mojitos.
